Résumé : | This is the first textbook to consider the medical, nutritional and cellular aspects of atherosclerotic coronary heart disease from a biochemical standpoint - a field in which scientists are frequently charged with 'changing their minds' or 'giving conflicting views'. The authors' primary aim is to provide a balanced and unbiased account of the role of diet in atherogenesis and how it may be manipulated to aid prevention and/or regression of the disease. The book illustrates why, after decades of concerted research, there are still many areas which are poorly understood. The authors provide an overview of the scale of the problem of atherosclerosis and its clinical consequences; a description of what atherosclerosis is; the risk factors associated with it (including how they have been identified); an introduction to the role of lipoproteins in transporting lipids around the body and genetic disorders of these pathways. This is followed by consideration of the influence of micro- and macronutrients in the development and prevention of atherosclerosis and a discussion of the influence of obesity and diabetes on the development of the disease. Finally the evidence for manipulating diet in order to prevent or even induce regression of atherosclerosis is comprehensively reviewed.
